Foxhole Spirits has done it again and created another cracking premium gin, HYKE. Foxhole’s creator, James Oag-Cooper, has a history of turning what was once a surplus by-product in to something special with HYKE’s award-winning big brother, Foxhole Gin, being a firm favourite on the shelves of bars and within the homes of gin connoisseurs alike. James recognised the unnecessary waste of perfectly good table grapes that were surplus to requirement of large supermarkets. So much so that he teamed up with Richard Hochfeld Ltd, arguably one of the largest fruit importers in the UK. Together they are re-inventing the equivalent of 1.4 million punnets of surplus grapes per year and thus the base spirit created helps to reduce food waste in supply chain. Cheers to that!
We were lucky enough to receive an invite to the launch of HYKE and although there seems like a new gin every week in the UK, we were particularly looking forward to tasting the new creation. It didn’t disappoint.

HYKE G&T

We went straight for a classic G&T served simply with a sprig of thyme, fresh lemon slice and plenty of ice. Hugely aromatic with sweet citrus notes and a glorious pine forest scent. On the palate HYKE offers a smooth appreciation of juniper with accompanied spices such as aniseed, cardamom and liquorice. The finish is earthy-dry with hints of sweet citrus. Hats off, James!

Other signature serves that night included HKYE Spritz & Martini, both of which I’m pleased to say we sampled with pleasure!

In summary, whilst new gins hit the shelves every day it seems, James has got this spot on. He appreciates the need to reduce waste but most impressively, he creates something that would commonly fall by the way side and instead breeds new life in the form of a premium gin. It’s versatile too and I’m sure will prove to be very popular with both new and seasoned gin lovers.
