Like the 12 year old, the DoubleWood 17 year old undergoes the same maturation in traditional oak casks, hogsheads and ex-bourbon barrels then gets lovingly transferred to ex-Oloroso sherry cask for the final 9 months before a 4-month marriage in a traditional oak tun. The 17 year old shares similar honey and spiced qualities, but more apparent is the heightened vanilla, a touch of crisp green apple, subtle toffee and a powerful rich complexity.
On the nose is the ever present vanilla and sophisticated oak with a background of apple. On the palate the sweetness comes through incorporating dried fruit, softly charred almonds with a complex taste of creamy toffee, oak and vanilla. The finish prolongs the everlasting complex sweet and spicy notes.
