This 12 year old DoubleWood has matured for at least 12 years in traditional casks, hogsheads and ex-bourbon barrels then gets lovingly transferred to ex-Oloroso sherry butts for the final 9 months before a 4-month marriage in a traditional oak tun. The result is a classic flavour that can only be achieved through utilising different wood types and lends itself to the complexities we taste today.
On the nose expect a nod to the Oloroso with sweet vibrant fruits complimented by vanilla and smooth honey. The palate continues with a soft and warm intensity with a wisp of cinnamon and spices, not forgetting the complexity of sherry also. The finish will bring a warm glow as it wanders slowly and harmoniously.
